Oats for breakfast are a staple in my kitchen. When my brother made me oats a few years back the twist of mixing in eggs was a game changer. Topping with chocolate had me sold.
I love the dessert aspect of fresh berries, dark chocolate and a little maple syrup. I appreciate protein in addition to the soluble fiber of to further reduce blood sugar spikes and increase satiety before a mid morning snack or lunch.
Here’s are the details if you’d like to make this like I do or change up the spicing and toppings to make it your own.
EGGY OATS
In a small saucepan combine:
1/3 cup of oats
seeds of one cardamom pod
1/2 cup of oat, coconut, or dairy milk
1/4 cup of water
Bring to a boil then set to simmer
Beat in vigorously 1 raw egg
Let it continue to cook for another 2-3 minutes
Spoon into your favourite bowl and top or layer with the chocolate, berries. Maple syrup optional or to taste.
Best eaten while hot.
